thanks, this answer is actually what I wanted so you did answer! I just don't have time with my little ones to get involved in something drawn out and difficult. but it sounded pretty easy.

I'm probably going to do some other baking as my oldest DS is in Yeshiva for Shabbat and always likes to take plenty of kibud with him.

I love receiving the recipes on this site - it makes Shabbat so much more interesting. Sometimes I'm in such a rush that it's just easier to make what you know works best and takes least time. This week I've managed to plan a bit better and decided to try some of the things some of you have been making.

120ml veg oil
225g sugar
1 large egg
175g plain flour
scant 40g cocoa powder
1.5 tsp ground cinnamon
4ml bicarb of soda
225g unsweetened apple puree

Preheat oven to 180C.
Prepare square baking tin.
Beat oil, sugar and egg until pale in color and fluffy.
Sift flour with cocoa, cinnamon and bicarb of soda.
Stir flour mixture alternately with apple puree into egg mixture and mix well.
Bake for 25-35 mins depending on size of tin or until a fine skewer comes out clean.

I actually make it in loaf tins as I often give it as gifts or as I'm doing this week giving a couple to my son to take with him to school for Shabbat.

Apple Chocolate Cake
Mix any chocolate cake mix, one can 21 oz. apple pie filling, and three eggs. Scrape into greased 9 by 13 pan. Sprinkle with 1/2 cup chocolate chips and 3/4 cup chopped nuts, any kind. Bake at 350 for 45 minutes. COULD PROBABLY VARY THE PIE FILLING AS YOU LIKE.

You have to put a handful of parsley. Also, I usually end up using dried bc I don't always have fresh available.

BennysMommy, I don't know if you found your avocado platter recipe but I make this all the time and it goes to the last drop. On a square platter (I just like the way it looks) I spread out a layer of thinly sliced purple onions, on top of that thinly sliced tomato rounds and on top of that I lay a layer of avocado cut into slices. Drizzle with a little olive oil, squeeze half a fresh lemon and then sprinkle with salt, black pepper and sesame seeds. The colors look so pretty and the combination is really yummy spread on challah.

One day I'll make the real version and see how it compares.

Here's my simplified butchered version of the recipe Smile :

1) cream 3/4 cup oil (instead of margarine) with 3 eggs and 2 cups of sugar (regular, I don't use brown sugar much, and I minused 1/4 cup) (I'm out of vanilla, had to skip it)

2) add 2 cups flour, 1 tsp baking powder, 1/2 tsp salt, and mix.

3) divide batter in half

4) dissolve 3 tsp coffee in 4 tsps hot water, add coffee to one half of the batter, mix.

5) Put 7 ounces chocolate chips (out of baking chocolate and couldn't buy it last minute) into zip loc bag and dunk in very hot water until completely melted.
Add melted chocolate to the other half of the batter, and mix.

6) Add chocolate batter to a greased pan, sprinkle choc chips over it, add coffee batter over the choc chips.

Bake.

I think I would actually use this recipe first. The unmodified recipe looks great but way too much patchke for me.

Bashinda, the only step I really made much easier is the melting the chocolate. Instead of baking chocolate on the stovetop, I dunked choc chips in a ziploc bag into hot water.

I never sift the solid ingredients together when I bake. I just do the liquids first and then add the solids into the same bowl.

And whenever it says to cream the margarine, automatically I use oil for that. Skips a step and much healthier. I don't use recipes with margarine at all.

Other than that, the real recipe is just long written out instructions to simply half the batter, add choc to one and coffee to the other.

Yum! The first time my brownies ever came out chewy. Okay, besides Duncan Hines that I used to use ages ago.
