I usually make the same 4-5 salads on Shabbat
1. Easy
2. I love these salads
3. Extras get eaten throughout the week, sometimes I mix them into other salads or recipes
Recently the dr wants me to try to eat a low lectins diet
This means I have to stop eating Night shade veggies plus other veggies. I have to check the list
My go- to salads that are a problem
1. Cubed Peppers, Cucumber, Tomatoes- this I call my version of Israeli salad. I make big separate tubs of each and then use the leftover
in different recipes during the week, easy becauce everything is diced already
2. Roasted eggplant and squashes. Eggplant and all squashes are out including zucchini
Please post salad recipes that I can make easily
MUSTS
1. Must be low carb with no sugar or sugar substitutes
2. Preferred veggies I don’t need to check
We don’t have pre- checked raw veggies and frozen pre- check are expensive
3. Simple and easy are best

Make your salads colorful with green leaves, red onion, kirbies, julienned carrots, avocado, baby corn, mushrooms, and garnished with spiralized beets for added color.

Zucchini and the various squashes are not nightshades.
Nightshade are tomatoes (including ketchup and BBQ sauce), peppers (including paprika, cayenne, black pepper, white pepper), potatoes (sweet potatoes are ok), eggplant and coffee.
Those who are nightshade free need to stay away from anything that says "spices" without specifying what they are in commercial products. Spice mixes too, like chili powder. Condiments like mustard, duck sauce and the like, need to be homemade because they have unspecified spices, which 99% of the time includes paprika. Hot dogs have paprika too.
Nightshades cause inflammation is some people. Nightshade are a family of plants, the Solanaceae family, characterized by alternate leaves, usually five-petaled flowers, and many-seeded fruits and including the eggplant, tomato, potato, and belladonna as well as the nightshades, capsicum peppers, tobaccos, and petunias.

I know zucchini and squashes are not nightshades
But they are on the lectin list
So, they are a no-no
There are other veggies on the list too, but I have to check when suggestions are made
Greens are ok, but hard to check, so I’m trying to stay away from them
I’m starting a lectin free diet- I haven’t read the book yet so, not too sure what else is off the list
Also - veggies need to be very low carb.

Packaged greens from Fresh Express and Organic Girl are clean and so easy to check, even without a hechsher. Add strips of carrots made with a peeler, or use a julienne peeler, and automatically you have a colorful appetizing salad no matter what other veggies you add.
Green beans are yummy to fill up on (and so colorful when you add fresh yellow wax beans).

Night Shades

String beans
Squashes
Also- no legumes or beans, no grains, no sugars, no eggs, no dairy
There are other no- no to the list as well
I might as well go carnivore

Not sure about Heart of Palm
Carrots - NOT Low Carb
Beets - NOT Low Carb
Turnips- Parsnips- Rutabega- NOT Low Carb
Tubers- NOT Low Carb

Purple cabbage is not hard to check, maybe try using those? Romaine hearts are also pretty easy to check.

This is very similar to autoimmune paleo diet Google for recipes.
Kohlrabi and carrots coleslaw
Fennel, radishes and carrot circles with chimichurri dressing
Start using pesto and putting that in everything
Also, you can make your regular salads for everyone else and your own personal foods separate

I love radish salad. Slice red radishes very very thinly. Add a few slivers of red onion. Drizzle with olive oil and season with salt until very tasty.

I don't think black pepper and white pepper are nightshades. It's bell peppers and chili peppers etc that are.
I use frozen greenhouse grown broccoli and cauliflower for salads. Avocados are great. And hearts of palm are fine.

Learn how to check the vegetables. It's not difficult.
Asparagus can just be peeled and then used.
Broccoli and cauliflower should be washed thoroughly under a strong stream of water. Place florets in a white bowl with warm water. Add dish soap and let soak. Then agitate florets in a white bowl. Examine the water to see that it is insect-free. If it is insect-free you may use the vegetable. Wash well.
If insects are found in the water, you may re-do this procedure up to three times in total. If there are still any insects, the whole batch must be discarded.
