can pour melted ice cream and then put topping on. like sprinkles or choc syrup...
or u can make a pudding mix (use water if u want it pareve) and put on whipped cream on top - and u have a choc cream pie (or whatever its called.
make a cheese cake

My neighbor makes choc. pb pie, but I don't have the recipe. I keep meaning to ask her for the recipe. You could try this one. There are a ton of recipes here, but I linked you to one that is parve.

easy recipe-although not so healthy-
break up about a dozen pareve oreo-type cookies, put in crust, cover with one large rich whip-not whipped. freeze
Tastes like cookies 'n cream ice cream.
