okay so besides the pumpkin pie I baked yesterday... this morning I made the sweet potatoes, the bread stuffing, and the cranberry relish ...
yeah gr this is cranberry season ... fresh ones are all over the place and so easy to cook ... throw em in a pot with some lime juice, mango, ginger, mandarin orange, garlic (fresh), brown sugar ... and voila the cook and pop open and all the flavor oozes into the air ...

Umm, I'm challenging myself to make shabbos without going to the market except to buy produce...It would be good to clear out my freezer!!
We have had so many guests recently, it will nice to just have shabbos with DH to ourselves.
So far I'm thinking:
Challah from freezer
Pickles
Purple cabbage salad
Green salad
Meatballs
maybe something with apples...

Weird Shabbat dinner this week for us. I think I'm feeling a little uninspired from last week's food-fest.
Vegetarian Sloppy Joes, with various add-ons
Noodles with tofu and peanut sauce
Some kind of vegetable I haven't come up with, or maybe some kind of soup?
Leftover chocolate souffle cakes from the freezer, from last week

Choc Moose - what is your crunch of almond salad?
Ok, I figured out our menu, since it's just DH and I and neither of us eat so much, it's smaller than usual:
Dinner:
-homemade chalah from freezer
-dips
-purple cabbage salade
-chicken soup with carrots
-meatballs
-rosemary garlic potatoes
-steamed green beans with garlic
-big fresh green salad with avoc, peppers, cuc, tom, carrots, slivered almonds, terra strips, and dried cranberries
No dessert, DH is always too full, but if he wants it I have some extra ice cream and choc chip cookies in the freezer - Oh, but we are going to a shalom zachor so he can also eat dessert there
lunch:
-challah from freezer
-pickles
-cherry chicken wrapped in mallawach dough
-big taco salad
-choc chip cookies

what is cherry chicken in mallawah? sounds good. How do you make it?

Small Shabbos this week, taking it easy:
Gefilte fish
chatzilim
coleslaw
corn salad
pasta salad, maybe
vegetable salad by day
soup by night
mushroom knishes (store-bought dough)
cholent by day
apple-cranberry crisp from happymom
maybe something instead of chicken
maybe sweet potato kugel if I'm in the mood and have extra time
salami from the freezer if anyone's still hungry
oh, and we have delicious whole-wheat challos from my mil, and her rugelach, and her cupcakes too (My baby's turning 1 yrs old ka"h on Shabbos!)

Cheery chicken in mallawach:
dice up 2 cooked chicken breasts. Open a can of cherry pie filling (I mashed the cherries so they would mix better and not be so big) Mix it all together and wrap in the malawach dough (can use puff pastry too, it will prob taste very much the same. Bake in oven until dough is puffed and golden.

Pickled mushrooms (DH loves this)

Coffee ice cream if anyone wants
Btw, whoever it was that posted on the chicken recipe threads about the duck sauce and coated in crumbs, I made it last week and it was delicious!

Thanks, Esther! I do love to cook, and I when I have the time I really enjoy experimenting with new and interesting recipes.
The acorn squash & streusel filled baked apples are both from Kosher by Design cookbooks. The acorn squash is from the original KBD, and the apples are from KBD Short on Time. Both are great recipes which have become favorites of ours.
The acorn squash halves are brushed with a brown sugar honey type mixture, and filled with fresh cranberries that have been cooked in a sugar syrup & then frosted with sugar. Besides for being delicious, the contrasting colors of the squash and the cranberries make this a beautiful side dish. I can look up the exact recipe for you, if you like.
The streusel filling for the apples is a mixture of oats, flour, brown sugar, & margarine (I use oil instead), similar to the topping of an apple cranberry crisp. Someone on the board once asked me for this recipe, so I already have it typed up, if you'd like it.
