We are throwing a big birthday party for my brother on Sunday. We are expecting around 60 people.
The meal is being set up buffet style, and instead of making a bunch of different salads, I'd like to set up a salad bar. There will be the usual lettuce, tomatoes, cukes, peppers, purples onions bla bla bla, but I'd love some interesting/creative/unusual additions to add to the bar and my mind is drawing a blank. Got any ideas?

Honey mustard
Balsamic Vinaigrette

olive oil with lemon juice salt and pepper ( I put in lemon pepper )

Can’t believe nobody mentioned fresh mushrooms!
Radish is also a good option.
I’ve seen breaded fried cauliflower as an add on/crouton in a salad. Was different and delicious.

I will be the voice of dissent here, and suggest that perhaps you should offer one or two assembled salads, or at least some "recipe" suggestions on cards for the indecisive or uncreative among us. (I know when we have guests who go to a cafeteria during the week, they appreciate having a salad that they KNOW is good, without having to figure one out themselves!)

Offer a variety of lettuces like arugula, romaine, spinach, kale, etc.
Don- forget about pink radishes and jicama as both are great in salads. Raw zucchini is great too.
Marshmallows can also go in salads.
Many people like anchovies in salads.
You should have plain olive oil available as well.

What wonderful suggestions! Thank you all so much! Party is today... the house is covered in star-shaped twinkly lights and silver candles, blue and silver bunting, blue and silver balloons, it looks gorgeous! My boys are beside themselves with excitement...Now I just need all the food to come out good
Here is what we've settled on for the salad bar:
Romaine lettuce, baby spinach
tomatoes, cucumbers, purple onion, shredded carrots, peppers, alfalfa sprouts
Roasted tomatoes, zucchini, onion, mushrooms, butternut squash
croutons, feta cheese, chickpeas, falafel bits, crazins, pickles, hearts of palm, corn
I'm going to make a caesar dressing and an oliveoil-lemon-herb dressing. I think I need one more... any ideas (recipes would be helpful and appreciated!)?

This is a really good point... I think I'll have my boys write up a few 'suggested combos' to up in place-name holders to put on the bar. Helpful and cute!
