Coq Au Vin
modified from a cooking site
cut up chicken, any kind
oil, any kind
3/4 cup sliced onions
box or can sliced mushrooms, 8oz
1 chopped green onion
2 cloves garlic, minced
2 T flour
2 cups red wine, dry if possible
2 T parsley
thyme, if you have it
pepper to taste
cut up carrots, chunked potatoes (any kind), chunked zucchini to taste - makes this more of a one pot meal
Brown chicken slowly in oil until done. Add your onions and mushrooms and sautee until tender. (Add the carrots, potatoes, and zuke if using).
Add the flour and then the wine, gradually. Cook until bubbly. Add your spices. Cover and simmer 30 minutres or until chicken is tender and juices run clear.
You can also transfer this to a disposable foil pan to put on blech for Shabbos/yomtov.

I'm so busy cutting up the other vegetables, I don't really notice...also, when I made this, I baked it for a while in the pan, just to make sure it's done...
Cutlets obviously take minutes whereas a big piece of chicken would take longer....
