Light-ish dessert needed

So, I don't want fruit, but I don't want double chocolate cake with chocolate fudge frosting either. Is there something in the middle that would be a good dessert for 12 people or so, that's not frozen or made largely from whipped cream?

I figure by Friday night, we'll want something sweet after dinner, but probably not have a ton of space and we probably won't want anything real rich . . .

Thoughts??

I was going to do a peach cobbler, but I couldn't find good peaches, and I've found that canned peaches just don't taste the same.

I think I'm trying to avoid chocolate. We kinda overdosed on RH. We area also schedule to eat one of our chocolate mousse pies (whipped cream, chocoalte and silken tofu - though you'd never know), so that's out, but right lightness . . .

I slice up a whole bunch of apples and mix them with sugar, cinnamon and a little flour. Then I just make a simple topping with whole oats, flour, brown sugar and some more cinnamon and margarine. I place the apples in an oven to table dish- top with the topping and bake at 350 for about an hour until apples are soft and topping is a bit crunchy. I serve hot with a scoop of ice cream.

I am sorry I am terrible at giving exact amounts.

Another option might be baked apples. Here's how I make them:

Peel and core Cortland apples. Brush them with some canola oil, & then roll in a mixture of ground nuts, cinnamon & sugar. I you like, you can fill the centers with canned cherry pie filling, or you can just bake as is. These are really yummy! Smile

I love anything with apples!!!!

sometimes I make baked apples and fill the center with a crumb topping, its pretty, easy and yum!!!!!

lani22: I use the topping from jumbleberry crisp in the Meal Lean I Yumm cookbook,it says to use a combination of fruits but I use only sliced peeled apples or cubed, peeled apples. Topping is: 1/3 cup brown sugar packed, 1/2 cup flour, 3/4 cup quick cooking oatmeal, 1 tsp. cinamon and 1/4 cup canola oil. Crumble it together and spread over apples. Yum!
