I bolded all the things you can freeze.
chix is best when fresh. Buy raw chix, clean it, and put in pan. cover and freeze. take out of freezer erev yom tov to thaw (defrost)- dress with sauce, and bake. you have fresh chix in half the time.
everything else freeze in the container you made it in. (I'm assuming you are cooking with disposables.) chix soup move into quart sized plastic containers. leave some room at the top as frozen liquod expands.
really you should be able to make most of your food way in advance.
Personally, this is our schedule:
TUESDAY: make shopping list
WEDNESDAY: my dh goes grocery shopping
THURSDAY: I cook just about everything. Leave almost nothing for friday. WHen I'm good I even set my shabbos table thursday night.
FRIDAY: I can enjoy with the kids with little pressure.

How do you stop the dough from rising from Thursday night to Friday?

put dough in an oiled bowl in fridge overnight. Rises more slowly in fridge. Wrap a platic shopping bag around bowl to keep dough fresh. I do this a lot, too.
