I teach Chumash to 6th graders. It’s departmental, so I only have then for 40 minutes. What are some cute/special things that I can do in honor of making Adar enjoyable? ( besides for no HW)

Institute special class rules. For example, in Chumash, every time someone says "Avraham" the whole class claps. Or have a "venahafoch hu" room - teach from the back of the class and have everyone sit facing backwards. Things will get a little rowdy, but the kids will appreciate your sense of fun.
