I am catering a small simcha and need some advice please! I would like to make a salad with romaine lettuce, craisins, mandarin oranges and some kind of nuts.
1) what nuts would you use?
2) what dressing would go well with this?
TIA

Thanks chicco. Is that a dressing that I can buy? or would you make it yourself? Could you please tell me brand names for it, or do you have a recipe? thanks

You could definitely buy it prepare. Not sure which brand is best.

You can make your own with equal parts mayo, red wine vinegar, sugar, and a dallop of strawberry jam and some poppyseeds.

Another option for a dressing:
1/4 cup each honey, mayo, and oil.
2 tbls apple cider vinegar
1 tbls spicy brown mustard

I have a couple of recipes that might fit your needs. Obviously they would need scaling for a crowd.

A.
Romaine lettuce
Dried fruit (such as craisins, figs, dates, etc.)
Fresh fruit (strawberries, mango, peaches, mandarins, etc.)
Candied almonds

Dressing:
1/2 cup oil
2 Tablespoons apple cider vinegar
4 Tablespoons brown sugar
1/2 teaspoon salt

B.
Salad greens
1 cup mandarins
2 scallions, chopped finely
1 cup fresh dill, coarsely chopped
1/4 cup candied almonds
Optional: red bell pepper

Dressing:
1/4 cup oil
2 Tablespoons white vinegar
2 Tablespoons sugar
1/2 teaspoon salt
Pinch of pepper

To candy almonds yourself, combine 1/4 cup slivered almonds with 4 teaspoons sugar over high heat. Stir continuously until sugar is melted and almonds brown slightly. Careful not to burn. Quickly spread almonds out on wax paper to cool without clumping.
