1 can hearts of palm
1 can baby corn
Grape tomatoes, sliced
Scallions
Snow peas
Dress with fresh lemon juice and fresh dill

OP , whenever I have a recipe that requires sugar in the dressing , I just substitute it with a packet of Stevia or similar sweetener and it does the job. But if you just don't like the taste of sweet, then this does not apply

More often than not, I just skip the sweetener completely; I've never had a problem with that.
Broccoli salad
avocado/tomato salad
corn and black bean salad
arugula and beet salad
cucumber salad
quinoa salad

Roasted eggplant and bell pepper salad: roast eggplant and bell pepper. Take off charred portion of eggplant, put in strainer with some salt and let sit to get rid of bitter part (not required). Peel bell pepper. Chop eggplant and bell pepper, Put in bowl. Add fresh or powdered garlic (optional), salt to taste (if didn't salt eggplant above), and olive oil.
Using a red bell pepper will make it a bit sweeter.

Heart of Palm salad
Heart of Palm, sliced
Baby tomato, yellow is you can find them, cut in 1/4
Avocado, diced in big chunks
Red onion
Drizzle with olive oil and lemon juice
Salt to taste
KohlRabi Salad
Kohlrabi, diced
Celery, thinly sliced
Cashews
Mayo
Salt and pepper to tastebuds
Chickpea salad
Chickpeas
Radishes thinly sliced
Peppers, different colors, julianned
Fresh garlic
Olive oil
Salt and pepper to taste
Anis/Fennel salad
Fennel thinly sliced
Fennel seeds
Lots of lemon juice
Drizzle of oil
Salt to taste
Black bean and sweet potato salad
1 can black bean drained well
cooked sweet potato, dice raw and roast in the oven
Fresh cilantro, chopped
Juice of 2 limes, may need more
Salt to taste
Grilled eggplant
Japanese Eggplant, slice 1/2-1 inch thick
Place on parchment paper and bake at 450 until golden brown
Dress with olive oil, fresh garlic, salt and some parsley.
All Time Favorite Pasta Salad (not diet friendly)
Elbow macaroni made according to package
1 pkg of frozen peas nd carrots, thawed not cooked
1 can Israeli pickles, cubed same size as carrots
1 small bottle of green olives with pimentos, well drained
1-2 apples, pealed and diced (this is the secret ingredient)
Mayonaise
Tastes better the next day
I love salads, I try to make 4-5 salads every week.
If you want more let me know
You can omit the sugar in any dressing.
