Sweet potato feta salad recipe?

Does anyone have the sweet potato feta salad recipe from either ami or mishpacha's shavuos issue? TIA!

1 large sweet potato diced
1 Tbsp olive oil
1 tspn garlic powder
1 tspn paprika
1 8 oz bag baby spinach leaves
1 red onion sliced
1 8 oz can beets diced
6 oz feta cheese crumbled
4 oz plain pecans, whole or chopped

Dressing
3/4 cup light sour cream
3 tbspn chopped vidalia onion
2 Tbsp fresh parsley
1 tbspn dried chives
3 tbspn white wine vinegar
2 garlic cloves
1/4 tspn salt
1/8 tspn pepper

Sweet potatoes-preheat oven to 375 degrees, line baking sheet with Parchment paper, toss sweet potatoes cubes with olive oil, garlic powder & paprika, bake 20 minutes covered, then 20 minutes uncovered

Dressing-use immersion mixer to combine ingredients

Does anyone have a recipe for an easier dressing that would work for this salad? I like the idea of a milchik dressing, but easier. Also, would craizins work in this salad, or would it be too much? Thanks
