You can use coconut drink, not really the thick coconut milk in from the can.

This has been my go to chocolate cake that I've been baking since I was a teen. Lately I've been baking it in a loaf pan and it comes out fine.
If you use yogurt instead of milk or an acid based liquid it will be a bit denser and not rise so high.

I make this almost every week. I make it in a bundt pan and use Apple juice instead of milk.

Is there any frosting recipe without margarine (or the like), ie. using oil-or should I just make a glaze for this cake?

Whipped cream is the only thing I can think of that's comparable to frosting but doesn't use margarine or shortening.

In fact, I make this cake all the time using a ganache as frosting. Basic recipe is chocolate chips (use real chocolate chips) and whipping cream - ratio of 2X the chocolate chips to 1X the whipping cream. Microwave on defrost setting for 2 minutes, mix, and then 15 second increments till chocolate chips are fully melted and mixed into the whip. Pour over cake and allow to cool/set.
Yum!

I ran out of reg flour & don’t feel like going out.
