I was also thinking about this!
Some people might like it on a deli sandwich.

I see the big root in stores all summer, and wonder who buys it, aside from for the Seder.

I was by an 8th generation Yerushalmi for a meal and they have a beet dip all year round. Just one of the million homemade dips she makes each Shabbos.

Based on an old Julia Child recipe, blend one can of undrained (unpickled) beets with one chopped cucumber and then add cold water to thin it out to the proper consistency. Add chrain to taste, S&P and a squirt of lemon juice. Top with a spoonful of sour cream or Greek yogurt and/or dill sprigs to garnish. Chilled beet soup is a great alternative to gazpacho on a hot summer night.

Ohhh, by chain you mean the horseradish root?
There are many recipes and uses for it. I thought you meant the horseradish beet mixture.

My father likes to use chrain as a condiment for lots of different foods, especially shnitzel.
We joke that its the Ashkenazi version of zchug.

It's a must in a bloody Mary and a great substitute for wasabi. I make a cole slaw I use it in and I love it with hot new potatoes and sour cream.

I made a fish recipe with flaky dough, salmon, spinach, and chrain. Everyone liked it. Tell me if you want it. I can't remember which cookbook it's from right now.

It adds a nice kick to tuna sandwiches (and I don't like chrein on gefilte fish!)

Mix it with mayonnaise, honey and mustard (or honey mustard Smile), spread on bone-in chicken pieces, cover with crushed French fried onions, and bake covered for an hour and uncovered for half an hour. Delicious!
