I was recently at a simcha and they served a delicious salad topped with thinly sliced sweet potato that was roasted.
I'd love the recipe if anybody has it out and the time to type it up. thanks.

Any other ideas?
someone told me about a recipe with shallots, but I don't have the dressing.
Or any other recipes.

For that small amount of mustard, you can easily omit or replace with some marror.
Or you can do a savory balsamic shallot vinaigrette (or other vinegar) using a large minced shallot instead of using garlic (you can do that in the linked recipe too).

I make this recipe all the time and it's delicious! I don't fry the sweet potatoes, I rather slice them very thin and stick them in the oven at whatever temperature until they look crisp and well done. Sure you lose out on some of the taste but that's the proce you gotta pay sometimes for health.
