That's Nile Perch. It is great for Moroccan fish - I first squeeze lemon on the fish after it defrosts and sprinkle with S+P. I layer veggies on the bottom of a big pan. Thinly sliced: onion rings, carrots, potatoes, red pepper rings, sweet potato. Drizzle a little olive oil and S+P. Sprinkle minced garlic on top. Place fish on top and layer tomato slices. pour over sauce :1/4 C olive oil, 1/2 C water, 1 tsp paprika and cumin, little tumeric, salt. Sprinkle fresh parsley/cilantro. Cover and bake at 350 at least 45 until vegetables are cooked through.
