Eggless Chocolate Mousse?

DH is dreaming of mousse, but I worry about using raw eggs (esp since I am nursing now).
Anyone have an easy choc mousse recipe, with ingredients I have at hand already? (I know, really demanding here, but I'm too tired to do something really complicated this week...)

I have in the house choc chips, rich's frozen whip, graham pie crust, instant choc pudding powder....as well as the basic flour, sugar, cocoa etc.

Let's see some magic...DH will be eternally grateful Wink

Two small riches whip containers, defrosted
1 package chocolate pudding powder

Whip all together and there you have it! Spoon into dessert cups, top with chocolate syrup/sprinkles/chocolate chips - whatever you like!

my all time favorite chocolate mousse recipe:
4 1/3 cups chilled heavy whipping cream
1/2 cup light corn syrup
1 1/4 pounds bittersweet (not unsweetened) or semisweet chocolate, finely chopped-I just use chocolate chips

Make mousse: Using electric mixer, beat 3 1/3 cups cream in large bowl until peaks form; refrigerate. Combine remaining 1 cup cream and corn syrup in heavy medium saucepan and bring to simmer. Remove from heat. Add chocolate and whisk until melted, smooth, and still warm to touch. Pour warm chocolate mixture directly onto whipped cream and fold in gently. Chill until mousse is set, at least 8 hours. (Can be prepared 1 day ahead. Cover and keep refrigerated.)

Whip a pkg of Rich's or Gefen's whip in the mixer. Add 2-3 T cocoa and 2-3 T sweetener (diet is okay too). Add a T of likker - Godiva or (Kosher) Kahlua is excellent!

Serve cold, in bowls..........mmmmmmm......

I still have a chocolate mousse here - no one ate it cause ... would have loved to share it - oh well

recipe:

whip up 1 pint rich's whip w/vanilla & spoon of conf sugar
second pint w/vanilla and cocoa & sugar (I forgot the amounts - brainfreeze)
put in graham cracker pie shell - voila

I made chocolatemoose's, cuz I only had one pint of whip, and it was just the two of us.
Went down soooo well - thank you.
Have written down the other recipes, gonna try them all.

OK this seems super easy. Would you keep it in the fridge or freezer?
Think it matters if the pudding mix I just found in my cabinet is ANCIENT? I'm talking like 10 years old... but the inner packet is sealed foil...
