veggie burgers is a good idea
theres also a recipe here for sweet potato/mashed kidney burrito where u can skip the cheese - dont know if a wrap is considered "too much wheat"
some vegetable curries are pareve bc they contain cocunut milk do a google search and serve it over couscous/quinoa
u should really go on some vegan sights for ideas

You can make socca, which are chickpea flour crepes (vegan) to use as wraps for burritos or tacos, etc... If you werent off eggs, I'd say make regular crepes (I make mine gluten free with egg and potato starch and water.)
