Shavuous dairy meal salmon issue

Hey all.

Having lots of company for dairy meal (doing subday am). I originally bought salmon fillet to serve baked along with ceasar salad, eggplant parm, penne a la vodka, mushroom turnovers and dairy zuccini kugel. Then some more guests decided to join and I realise dI wouldnt have enough full pcs so I cubed and planned on making it breaded in corfn flake crumbs, on skewers with a grilled pepper salad (binah a while back) and serve as an appetizer (which I really didnt have).

When was discussing with DH he said that he thinks the meal itself (not the appetizer) needs a good protein- esp for those who dont like cheeesy stuff. He thinks maybe I should also make a whiter fish for the main.

Then I thought of a cute idea- use something else for an appetizer (something my SIL is making) and present the cubed breaded salmon on a serving platter with dipping sauce and ppl can add to their salad or pasta to make it more filling.

What do you think?

its just not so much of a guy thing- instead of a think piece of meaty steak you get a thick piece of fish...

Yes, it goes together with the breaded salmon skewers. I'll give you the whole thing (from Binah 2008).

4 salmon fillets, thinly slice, no skin
1 cup seasoned corn flake crumbs (I use plain)

Marinade/Sauce
4 TB mustard
4 TB honey
1/2 C olive oil
2 TB fresh lemon juice

Directions:
Cut salmoninto approx 1 inch chunks. Combine mustaard honey, olive oil and fresh lemon juice into a box and mix. Reserve half to use later. Place pieces of salmon into remaining marinade and mix to coat all sides. Cover well. Refrigerate half an hour or overnight.

Preheat over to 375. Roll each piece of salmon in corn flake crumbs. Line on cookie sheet, bake for 12 minutes, allow to cool.

Before serving place 2-3 pieces of salmon onto wooden skewer by piercing each pc in the center

BROILED SALAD:

2 large red onions
3 medium bell peppers (any prefered colors)
1/4 C olive oil
kosher sald
black pepper

directions:
preheat oven to broil. Meanwhile, prepare grilled veggies. Thinly slice the red onion into round discs and the peppers into round flower-shaped slices (to make pepper flowers, cut away the stem from the top of the pepper and then remove seeds from the center. Cut slices of the pepper across the round wideith of the pepper.

Place onions and pepper rounds on a baking sheet lined with parchment paper and drizzle with olive oil. Sprinkle kosher salt and ground pepper. Broil for 12 minutes or until starting to blacken.

To serve, pile the onion and pepeprs into a small pile in the center of the plat and prop salmon skewer against it. Drizzle with mustard dressing. Can be served warm or at room temp.

GREAT APPETIZER!!

maaaaaaaybe just one Tongue Out

Forgot to mention I'm also serving a delish caramel milkshake type drink (in martini glasses) and iced coffee. Cheesecake for dessert and ice cream for the kids.
