It could be with cheese, or with a dairy dressing, just something interesting, easy to make and transport and with ingreadients I have here.
Any suggestions??

As mentioned, Greek salad with feta cheese; Caesar salad with mozzarella cheese.
You could also make a mayo based salad and substitute the mayo with sour cream or yogurt.

Milchig Salad with Avocado Dressing
Dressing:
medium ripe avocado, peeled and cubed
1/2 c mayonnaise
1/3 c oil
1/3 c water
3 T lemon juice (I use a drop less so that it's not so tart)
2 garlic cloves, peeled (I use crushed cubes)
1/2 t salt
1/4 t hot pepper sauce
bunch romaine lettuce torn
1 12-oz box of grape tomatoes, sliced
1 c shredded mozarella and cheddar cheese
1 2 1/4 oz can sliced black olives, drained
2 scallions, chopped
small bag chips of your choice (I use terra sticks)
Blend dressing ingredients until smooth. (I whisk with a fork but you should probably use a blender!) Layer salad ingredients, pour dressing over, sprinkle with chips.

yup, love the avocado dressing salad.
also a sweet caesar cheese salad (shredded cheese).
and Greek salad with feta cheese.

Taco salad!
Use a bag of shredded or chopped lettuce (the kind with shredded carrots is good too)
Chopped cucumbers and red peppers
Add shredded cheddar cheese (or Monterey Jack... or "Mexican" cheese)
Dressing is half a jar of salsa with a couple of spoonfulls of mayo
Take a small (70gram) bag of plain Doritos and crush the chips a little bit (so they're in smaller pieces) and dump the chips on top of the salad
***to transport, have the veggies and cheese in a bowl. Add chips and dressing when you get there***

This sounds interesting. Thanks.
A few questions: Can I prepare the dressing before Shabbos and have it still good for Y"T? Also, do you have an idea of subsitutes for the cheeses that I can easily get here with Badatz? Can I use the regular yellow cheese?

I use the Tnuva cheddar... it's not like cheddar from America, but it's allright. (or those bags of grated yellow cheese)

Thanks. I don't recall having seen Tnuva cheddar. Does it have a Badatz or other mehadrin hechsher?

I don't see it so often.... I'm sure it's around now because of Shavuos. It comes packaged in the cheese section of the supermarket... I've been meaning to buy some.. I'll look in the supermarket today and get back to you on which hechsher it is.
I make taco salad without the cheese all the time and that's also quite tasty.... and pareve.
