ISO pretty and easy salad for a party

I was asked to make a salad for a women's gathering tomorrow night. I need ideas of something easy that I can throw together, yet elegant and yummy. I was thinking to make a corn/pea/pepper/red onion salad, but I dont have the exact recipe. Any other ideas? TIA!!

I think this one is in Kosher by Design, but I don't have the exact recipe; I'm sure someone here has that cookbook.

It's red cabbage, mandarin oranges, scallions, grated carrots, pine nuts, and craisins, with a dressing of brown sugar, honey, water, oil, red wine vinegar, spices.

It's really easy because if you buy a bag of shredded purple cabbage and shredded carrots, the only thing you need to chop are a few scallions- everything else can be thrown together easily in a bown! I found that it's good to make this salad a few hours in advance so it marinates (even a day in advance) but put the pine nuts in right before serving or they become purple and loose some of their crunch.

I make one with romaine, mango, grape tomatoes, avocado (which can be left out if it's too expensive for you to use in bulk), red onion and a sweet vinaigrette. I also toss in either carmelized slivered almonds of sunflowers seeds for a crunch.

All the diff. colors make it a great salad to look at and it's so yummy this time of year.

I LOVED the presentation of the mosaic salad in this past issue of Relish.

Basically, you line a deep square dish with lettuce and fill up nine "squares" of the following veggies and then drizzle a dressing over them all. Then, people can take whatever they want.

grape tomatoes
black olives
chickpeas
avocado
mushrooms
feta cheese
cucumbers
purple onion
hearts of palm

I personally would substitute either the cheese, mushrooms, or hearts of palm for baby corn, carrots, or orange pepper for more color.

I just looked at that (looking for a salad for a sheva brachos I'm making) and the photo looks like there is some kind of leafy green in the salad and I don't see one in the ingredients. Can you clarify?

That photo is not a photo of the rainbow salad.
The rainbow salad is from KBD kids in the kitchen. The photo in the cookbook shows the salad layered in a trifle bowl and it is very pretty.
