Any good recipes using fresh dates? Salads, sides, desserts?? TIA

Here is a great cake to make that has dates in it (although probably no one will know)

cake
1 1/2 cup/s Dates Checked
2 1/4 cup/s Boiling Water
1 1/2 teaspoon/s Baking Soda
1 cup/s Oil
1 1/4 cup/s Sugar
3 Eggs
2 3/4 cup/s Flour
1 teaspoon/s Baking Powder
2 tablespoon/s Cocoa
1 pinch/es Salt
Topping
1/2 cup/s White Chocolate Chips
1/2 cup/s Chocolate Chips
3/4 cup/s Chopped Pecans/sliced Almonds

Preparation
Soak the dates in the hot water with baking soda. When soft blend them with and immersion blender. Mix all the rest of the ingredients together and pour into a round pan (I like to use springform pan). Sprinkle on the chocolate chips (both kinds) and the nuts. Sprinkle confectioners sugar on top and bake at 350F for about 45 minutes

This uses dried dates. OP asked for fresh.

It's kind of out of season but I use fresh dates (and fresh figs when I can get them) in a Simanim salad:

2 large heads butter lettuce, torn into bite size pieces
1 bunch spinach (or I use green leaf or red leaf lettuce or any mixed greens)
seeds of ½ pomegranate, all rind and white stuff removed
½ cup raw shelled pumpkin seeds (I use trader joe’s pepitos), toasted in 350 oven for 10 minutes
½ yellow apple, with peel on, cut into ½ inch chunks
½ red apple, with peel on, cut into ½ inch chunks
8-10 pitted fresh dates, cut into ½ inch rings

Honey Leek Vinaigrette:

½ cup canola oil
2 TB white vinegar
1 TB minced leek
2 tsp honey
1 tsp dijon mustard
½ tsp salt
½ tsp garlic powder
pinch of cayenne pepper.

Combine dressing ingredients until emulsified. Refrigerate at least four hours before using. Toss with salad just before serving, leaving some pomegranate seeds, dates and pumpkin seeds to sprinkle on the top.

Smile I put them in the food processor with half as many hazel nuts, half a banana and a splash of grape juice. It makes a great sandwich spread.
