Anyone have any great recipe for QUINOA?

Quinoa, Black Bean, & Corn Salad

2 cups vegetable or chicken broth (I use water with MSG free soup mix)
1 cup quinoa
1 can black beans, drained & rinsed
1 cup corn kernels
1 red pepper, chopped
4 scallions, chopped
1/4 cup chopped fresh cilantro or parsley
2 cloves garlic, minced
1/2 tsp. cumin
1/4 tsp. cayenne pepper (or to taste)
3 - 4 T. lemon or lime juice (preferably fresh squeezed)
3 to 4 T. extra virgin olive oil
salt & freshly ground black pepper

Cook quinoa according to package directions in broth. Once quinoa is cool add remaining ingredients. Yum! Keeps 3-4 days in the fridge.

Another one of my favorite quinoa dishes:

Mash one ripe avocado & add about 2 cups of cold cooked quinoa & salt to taste. Easy & so yummy!

One more quinoa salad that I haven't tried yet, but that looks really good: (can you tell I love quinoa? Smile )

1 cup cooked quinoa
1/2 cup diced cucumbers, red pepper, & avocado
sprinkle in diced mango, craisins & chopped walnuts
Combine with Italian dressing or sweet vidalia onion dressing

bump!

I was thinking of frying onions and mushrooms and then adding the cooked quinoa but what you all are describing about adding the raw quinoa and water to the fried onions sounds like it would come out much more flavorful. Can I leave the mushrooms in there too? so, fry onions and mushrooms, then add quinoa and water and boil/simmer till water is absorbed?
also as a hint to get the bitter taste out, I usually put a teaspoon or so of chicken soup mix into the water and then let it "boil in" to the quinoa.

I put in scallions, black beans, tomatoes, cumin, coriander, lime juice, salt and pepper..it is SO GOOD!

I got this recipe on the back of the box of a President's Choice brand of quinoa, and we really enjoy it:

‎1 pkg Quinoa (I suspect it is about a cup of quinoa)
2 tbsp olive oil
1/2 cup diced carrot
1/2 cup diced onion
1/2 cup diced sweet red pepper
2 cloves garlic minced
2tsp ground cumin
2 tbsp chopped fresh parsley
1/2 tsp salt

In small saucepan, bring 2 cups water to boil. Stir in Quinoa Reduce heat to LOW and simmer, covered, for 15 minutes. Remove from heat and let stand 5 minutes. Fluff with fork

In large frying pan, heat oil over MEDIUM _ HIGH heat. Cook carrot, onion, red pepper, garlic and cumin for 10 minutes, stirring frequently, or until vegetables are tender. Stir in cooked Quinoa, parsley and salt.
Serve salad hot or cold.

I often do this. I fry onions and mushrooms and add soup mix and raw quinoa and water. When it's ready, I add in a lot of shredded cheese while the quinoa is still hot and mix it all up until it's all cheesy. Also, I don't fry the mushrooms for too long so that they don't get completely mushy.

the recipe I made ended up delicious!! except I think I either put in too much dressing and/or used too much water when cooking bc it was very mushy and dressing-y. I wound up mixing it with lettuce and it was DELISH!!!!
it never even occurred to me to mix with cheese like that, I will have to try it!!

I dont know about the dressing, but the amount of water 2:1 is way to much for quinoa...I do 1 cup of quinoa to 1 and 1/2 cups of water and its perfect.

Speaking of Norene's Healthy Kitchen, I make her quinoa salad all the time- YUM! Basically, it is the bulgur salad, but you use quinoa instead of bulgur.

Shopmiami, I will have to try this! I make quinoa with cheese and it's delicious, but I've never tried adding sauteed onions and mushrooms, it sounds really good. Thanks for the idea!

My sister made this for our chanukah party and it was really good:

1 c raw quinoa
1 c edamame
1 red pepper diced
1 yellow pepper diced
1 small red onion diced
1/2 c craisins

Dressing
1/2 c olive oil
1/4 c white wine vinegar
2 Tbsp Dijon mustard
3 Tbsp sugar
1 tsp salt
1 tsp pepper

Cook quinoa as per pkg. when cool add Veggies & dressing. It lasts for a couple of days.

I'm not sure this will help, but I toast the quinoa, dry, in a pan before rinsing it. Gives it a wonderful flavor.

Sautee vegetables: onions, mushrooms, peppers, celery, zuchinni, carrots...
Cook the quinoa as you'd cook rice
Mix them together.

BTW, is quinoa Kitniyus?
