I don't want banana bread, I have one of those that I like, but I'd like to make one that is more cake like. Kind of like carrot cake but with bananas instead.
The only ones I can find all have sour cream or buttermilk in them, and the spice and spirit ones have coffee or coconut in them, neither of which I want to use.

Everyone goes crazy for my mother's banana cake -
2oz soft marg creamed with
5oz sugar, add
1 egg
5oz self-raising flour
1/4 tspoon baking soda
1/4 tspoon cinnamon
mix all together and add mushed up banana.
The above recipe is for one medium sized banana. I normally use 3 bananas and treble the recipe.
Bake in greased tin at gas mark 5 / 375 farenheit for 20-25 mins.

here's mine:
2 cup sugar
1 cup oil
4 eggs
6 bananas
3 cups flour
3 ½ tsp. baking powder
2 ½ tsp. baking soda
1 cup chocolate chips
Mix together and pour into 4 loaf tins. Bake for 1 hour at 350°. (can also do it in other sized pans)

Monday night I made one from the purple Lub cookbook and it's completely gone (the cake not the cookbook); let me know if you want it (the recipe not the cake lol)
