Looking for one or two simple recipes for traditional Persian Jewish salads.
I'm going to be making Borani-E Esfanaj so I need something parve or dairy...

I don't know if it is davka Jewish but we once did a persian purim at our shul and I found a cucumber and pomegranate recipe online. It was peeled cubed cucumber (like in israeli salad) and pom. seeds, and the dressing was mint, lemon juice and oil. It was good.

I thought the basic persian salad is shirazi salad, pretty much similar to israeli salad--cukes, tomatoes, red peppers and onions cut in small pieces (but not as small as israeli salad), with lemon juice, salt & pepper and olive oil. Persian addition is mint and dill.
Another popular one is simple lettuce salad with mint vinaigrette. Add a bit of pomegranate syrup (if hard to get a bit of balsamic vinegar will do) for sweet-tart flavour.
Or beetroot salad. I'll ask around if my real persian friends have a good recipe.
