The first salad is one that I made on Yom Tov several times and everyone devoured it - even my picky dh!! It's great for using leftovers...
romaine lettuce
purple onion
cherry tomatoes
cukes
leftover roast, cut into little pieces
pomegranate seeds
I made a dressing of mayo, mustard, water, garlic powder, salt, and splenda - like a mock honey mustard.
The second salad is one that I made up in high school and my friend begged me for the recipe, so I finally figured it all out:
iceberg lettuce mix w/ cabbage and carrrots (from a bag)
sliced mushrooms
purple onion
cherry tomatoes
mandarin oranges
Nish Nosh crackers w/ zaatar (green bag)
Dressing:
1/2 c. mayo
3 Tbsp. mustard
3 tsp. granulated garlic
1 1/2 tsp. onion powder
3 Tbsp. dill
dash of oregano
1/2 c. sugar or splenda
1/4 c. white or apple cider vinegar
2 tsp. lemon juice
water, for thinning
Mix all the ingredients together and adjust sugar and spices to taste. Add water to thin to liking. Pour over the salad and add the crackers on top. Mix right before serving.
