Strawberry Pastry Cups - Q&K
-4 oz Parve cream cheese
-2 cups prepared instant vanilla pudding
-16 mini pastry shells
-6 strawberries, sliced
Beat cream cheese with mixer until soff and fluffy, about 2 minutes. Beat in vanilla pudding for about 1 minute. (I'm doing this on YT by hand with cream cheese softened at room temperature, and using a whisk.)
Spoon filling into pastry shells. Garnish with sliced strawberries. (I'm using frozen whole strawberries to garnish.)
(Most of my desserts this time around are these simple to assemble kinds.)

Granola Peach Ice Cream - Q&K
-2 cups frozen sliced peaches, thawed, or fresh
-64 oz. parve ice cream (I'm using homemade)
-1 cup granola
In each dessert bowl, place 2 scoops of ice cream and 1/3 cup peaches. Sprinkle 2-1/2 Tbsp granola over top.
Rolled Onion Kugel
dh requested something like this, rolled like a jelly roll. I will update once I have a recipe.

Crisp Salad
-10 oz. romaine lettuce
-1/2 red onion, thinly sliced
-1 cup grape tomatoes, halved
-2 kirbys, cubed
-1 avocado, cubed (optional)
-1 Tbsp lemon juice
-2 Tbsp olive oil
-1 garlic clove, crushed
-1 tsp kosher salt (less if using regular salt)
-dash coarse black pepper
Layer lettuce, onion, tomatoes, kirbys, and optional avocado in salad bowl.
Combine lemon, olive oil, garlic, salt and pepper in plastic cup. Mix well.
Drizzle over salad right before serving. Toss very well with salad tongs.
Balsamic Vinaigrette Salad
-10 oz. romaine lettuce
-1 1/2 cups grape tomatoes, halved
-1 Tbsp balsamic vinegar
-2 Tbsp olive oil
-1 garlic clove crushed, or 1/2 tsp garlic powder
-3/4 tsp kosher salt
-kosher salt, to taste
Arrange lettuce and tomatoes in salad bowl.
Combine balsamic vinegar, garlic and salt in a plastic cup. Mix well.
Drizzle over salad right before serving. Toss very well with salad tongs.
Spinach Dip

I made 24 very small puffs (used an ice cream scoop), and served each person 3.
I would say that you would get 12 muffins out of the potato dough.

Not QUITE ready, but this will be my inspiration (+ family dishes)

Interesting, Ruchel. I know people who b'davka serve from different cuisines on Succos as it's the Y"T where we bring karbanos for the 70 nations.

Empanadas:
2 cups flour
1 teaspoon salt
1/4 cup cold water
1 egg
1 teaspoon vinegar
3 tablespoons marg./oil
Meat:
1 lb. ground meat
1 onion
2 garlic cloves
Salt, pepper
Mix flour and salt. Make a well and add egg and vinegar and oil. Cut until course. Add water until holds together but not sticky. knead for a few minutes until smooth, wrap in plastic and refrig. for at least one hour. (May need extra flour.)
(Sometimes I use regualr yeast dough instead of pastry dough.)
Saute onion until light, add garlic and meat. Cook through.
Roll out and cut circles. Add meat, Fold over and press down with tines of fork.
Recipe is to fry, but I am going to bake.

Assorted gef fish (that means looking in freezer for bits and pieces of fish that I've shoved in there over the year)
Sweet & sour fish - that is, I hope I have fresh fish in the freezer to make this. I'm really not sure.

Yerushalmi kugel - frozen

Wow ra-mom, you must spend forever in the kitchen! How do you find the time?? So jealous.
Also you're lucky that your husband will eat that much variety of things! DH won't go near 3/4 of the things on your yummy menu. Oh well...
