Hi,
does anyone have a recipe for a baby corn salad? I've tasted one that I thought was good at Village Pizza in Lakewood. It has baby corn, purple onion and peppers. Any other variations and dressings would be appreciated!

Out of curiousity, how were the vegetables cut? Was the baby corn whole, and the peppers in strips? Or was everything diced?

baby corn was sliced or chunks, purpled onion and peppers (I think only green) were diced.

What sort of dressing did it have? With mayonnaise or without? Sweet or savory? I'll try to help you with a dressing.

no mayo. more like a marinated salad. not too oily, more vinegary. and some sort of green spice like parsley or basil.

3 Tbsp oil, 2 Tbsp lemon juice, 1/2 tsp mustard, 1 tsp salt, 1/4 tsp black pepper, and sliced scallions or chopped parsley

a very easy and good dressing for that salad in bottled italian dressing and let it sit for a bit for it to marinate
