I went to a restaurant the other day and ordered a spinach salad. It came with avocado, craisins, sunflower seeds and baby corn and a poppy seed vinaigrette. I wanted to make this for my family this shabbos so I found the following poppy seed vinaigrette recipe online
Poppy Seed Vinaigrette:
2 tbsp olive oil
2 tbsp apple cider vinegar
1 tbsp lemon juice
1-2 tsp sugar
1/2 tbsp poppy seeds
I think I'm going to omit the baby corn and add cherry tomatoes and hearts of palm.
I've also done salad with poppy seed vinaigrette and mango, blueberries, cukes and julienne carrots.
If you do a search for spinach salads, you'll find a bunch of recipes for salad dressings w/o mayo

what about hearts of palm tomato red onion and some avacado with oil and salt & pepper, tomato onion salad dressd with emon oil and spices, israeli salad, cucumber salad, bean salad, sesame noodle salad, the kosher pallate spinach mushroom hearts of palm salad posted on this site works well with romaine to.
what are you looking for I have many other ideas are you looking for dressing recipes or combo of veggies to use

Most salads I make have no mayonaisse.
Try this:
Dressing:
1/4 cup white sugar
1/4 cup red wine vinegar salt and pepper to taste
1 tablespoon chopped fresh basil
3 tablespoons olive oil
Salad:
1 bag mixed salad greens or Romaine lettuce
1 thinly sliced fennel bulb
1 orange, peeled and segmented
1/2 red onion, thinly sliced
1/2 cup slivered almonds
1/2 cup dried cranberries or raisins

How about a bean salad?
1 can kidney beans (drained and rinsed)
1 can white or garbanzo beans (drained and rinsed)
1 can green beans (drained)
1 can corn (drained)
1 small red onion or large shallot, slivered
1 red, green, yellow OR orange pepper, slivered
Dressing
2/3 cup apple cider vinegar
1/2 cup salad oil
1/4 cup sugar (or more to taste)
1 tsp basil
1 tsp oregano
(any other spices you like)
Mix all salad ingredients in a large bowl. Make dressing in a separate bowl whisk until all sugar is dissolved. Pour dressing over salad and mix well. Let sit about 1 hr or more to let all the flavors blend together.
This recipe is great because it's all interchangeable. You can omit things and add other things. Like if you don't like peppers instead add tomatoes,broccoli or black olives etc. You can also add chunks of sharp cheddar cheese. Or add everything in. This dressing is also great on pasta salad.

I have two col slaw recipes and a chicken salad recipe.
Asian Coleslaw Salad
Large head of cabbage
Scallions
Almonds
Chinese noodles or noodles from ramen soup -optional
Dressing
¼ cup sugar
½ cup rice vinegar
¾ cup vegetable oil (can substitute ½ the oil with water)
¾ tsp salt or chicken broth powder
Pepper
Bake almonds at 350 until golden brown-WATCH CAREFULLY to prevent burning – let cool
Marinate the cabbage
***Add almonds and noodles before serving
"Seven Day" Slaw
1 head cabbage
1 red onion
1/2 c sugar
1 c oil
1 c vinegar
1/2 T dry mustard (I prefer to use 2 T dijon)
1/4 t sale
1/4 t black pepper
- slice cabbage and onion thin or shred
- toss cabbage with 1/2 of the sugar
- mix the other ingredients and bring to boil (I nuke
them)
- pour over cabbage; let sit 5 minutes, then mix well
- chill
Dad's Chicken Salad
(Sorry I have no proportions, my dad doesn't measure so I don't know. We just taste it and keep adding till it tastes right.)
Boiled chicken (from soup) diced or shredded
1-2 onions, grated (it will pretty much be a liquid)
celery, diced
lemon juice
olive oil (not much)
salt and pepper

I do a similar salad that we love: Slice plum tomatoes in rings. Toss with halved green olives. Season with olive oil, a bit of vinegar (whichever kind you like), salt, pepper, and Italian seasoning.

we don't use mayo that much. here are two salads my family loves.
Tomato, mushroom , onion salad.
cut up a bunch of cherry tomatoes.
peel and clean fresh mushrooms, (I put in a lot less becuase not everyone likes it.)
A purple onion with 1/2 circle slices (thinly.)
1/3 c vinegar
1 tbsp oiil
(some add water, I don't)
seasoned with Garlic powder, salt, droooop of sugar, drop of black pepper, and basil and oregano. My family loves the basil oregano, just season according to your likes.
the next salad we call rainbow salad.
Different colored peppers. Red, Yellow and orange. (I usually do the same amount of each, if want to make it huge I do 2 of each/ 1 1/2.) then peal and slice a few cucumbers (again depending on how much you want to make) and a purple onuion also sliced in 1/2 circles. the peppers should be cut into about 2 -2 1/2 inches lengthwise.
Dressing:
1/4 c vinegar
1/4 c oil
1/3 c water
1/2 c sugar
2 tsp salt
1 tsp black pepper (optional).
variation, some do fresh carrots instead of orange peppers and baby corn instead of yellow peppers. My kids don't like either so I just do peppers.

1 head Romainne hearts, cut or torn into bite-sized pieces
1 med-lg avocado
1 med-lg mango
2 Roma/plum tomatoes, or 1/2 pint grape tomatoes
1/2 cup roasted or candied walnuts or pecans
Dressing (I don't measure exactly, but I'm pretty sure this would be my measurements:
2 Tb apple cider vinager (or 1 Tb Balsamic, and 1 Tb white)
2 Tb sugar
1/4 cup oil
Salt and pepper to taste
Cut avocado, mango, tomato into similar-sized pieces. Place in a bowl with lettuce.
Right before serving, add nuts and dressing.
This is my most-requested salad. (And one of the reasons my teenage sisters call me a gourmet cook )
