Does anyone have a dressing for bok choy salad that is not the typical vinegar/sugar/soy sauce/oil?

You can make it with some mayo,garlic poweder, black pepper, little water and a little splenda. Delicious too!
I once ate it with a realllllly good peanut butter dressing.
I know it's no that healthy but if anyone has that recipe, pls post as well. Thanks.

I make soya tehina dressing which goes nicely with spinach and lettuce, so would probably work with bok choi. For 2tbsp tehini (unseasoned), add 3tbsp of water or OJ gradually (it first starts to thicken then become more liquid), 1/2 tbsp soy sauce and very small amount of honey. A bit of chili, chopped garlic, chopped scallion or sesame seeds are optional.

I've posted this recipe before. I bet the dressing will go great on Bok Choy too, and it's very pretty.
Chinese (Napa) Cabbage - this is a beautiful appetizer
1 hard egg
2 Tablepoons oil
2 Tablespoons cider vinegar
1 pimento, cut up (sometimes it was hard to find kosher so I used jarred red peppers)
2 Tablespoons chopped parsley
1 onion, sliced and minced
1/2 teaspoon salt
1/8 teaspoon pepper
(I usually double the recipe because it's so good over the cabbage)
Chop egg and add remaining ingredients. Mix well and pour over plated, sliced (like a steak) Chinese cabbage.
Or, just pour over sliced Chinese cabbage. Toss lightly and serve at once.

Bok Choy Salad w/ Peanut Butter Dressing:
Salad:
1 head bok choy, cubed
1 red pepper, cubed
1 bunch scallions, sliced
chow mein noodles
toasted sesame seeds
slivered almonds
Dressing:
2 T olive oil
1 T toasted sesame oil
2 T brown sugar
3 T apple cider vinegar
3 T soy sauce
2 t peanut butter
1/2 t curry powder
1/4 t crushed red pepper (optional)
Everyone who eats this loves it. I would just advise you to mix it really well as the peanut butter can remain clumpy if you don't.
