I buy fenugreek seeds from the grain/bulk store near me called Al Hamishkal.
You probably can get them in a health food store or in the shuk or in any places that let you buy grains and beans and such by weight.

I decided since shabbos starts so late, I'm only serving the first course, fish, challah, and dips. Anyone who wants chicken can have it earlier. We did it last week and it went great. No one is really hungry that late.

Chilbeh- take fenugreek seeds and soak them in water for a few hours. A lot of water. Pour off the water. Stick what is remaining in the blender along with some tomato and garlic and parsley. Season with salt and lemon.

Enjoy!

Seraph- you're way of making chilbe sounds interesting.
I make it as follows:
soak it in water which I then pour off (I do that a few times to get rid of the bitter taste)
put it in the blender w/ some lemon juice, water, salt, and schug. I make it a bit thinner than what I would like it to be bec. it continues to absorb the water when it sits in the fridge
btw. a small amount makes alot and it can also last for 2 weeks (maybe longer, but I never make more than that at a time)

Garlic Roasted Eggplant Dip
• 1 medium eggplant
• 1 medium head of garlic
• salt and pepper to taste

Wash, dry, and pierce eggplant with a fork. Wrap in silver foil. Wrap the whole garlic head in a separate piece of foil. Place both wrapped veggies in a baking pan.
Roast in oven preheated to 425 until soft (about 1 hour for garlic, 1 and a half hours for eggplant.)
When eggplant has cooled, cut it in half and scoop out the soft flesh.
Squeeze out head of garlic, top side down. It should come out in a stream. Combine. Season with salt and pepper to taste. Blend.

Tomato Dip
• 2 over ripe tomatoes
• 2 small cloves garlic
• 1/2 jalapeño pepper, seeds removed
• 2 Tbsp olive oil, optional
• salt and pepper to taste

Wash, dry, and cut the tomatoes into chunks. Place in blender. Add other ingredients.
Blend well until dip is smooth.
