I've tried millions of baked recipes and none come out crunchy. Anyone know of a CRUNCHY one in the oven-basicly low fat?

FIsh cakes! Mash it up raw with egg, matzo meal, garlic, cilantro, onion. Shape into patties and pan fry. REALLY good. I make a mayo/garlic/lemon/worcestershire sauce to go with it.

A good side with the tilapia fish cakes is a lime cilantro coleslaw - lime juice, oil, cilantro, salt, and cabbage. Works great together on a taco shell too!
