How about making a yearbook? You need to take pictures of each kid, give out copies, where kids can write in the English and Hebrew names of their classmates (copied, of course). You could work on this before the last day, as writing and reading review. If you have a large class, it would get tedious, however. Then, on the last day, give out 12"x18" pieces of construction paper or poster board, and as much scrapbooking supplies as your means allow, including foamies alphabets, for kids to make a fancy cover for their yearbooks. If it's not too late, have them research their names, and write, or you or the parents write about who they were named for and include it in their yearbooks. Or, you research something about their Hebrew names,(f'rinstance, a person in the Torah with that name, or the Hebrew translation of that name) type it up, and have everyone glue the paragraphs onto the appropriate child's page. Or have them glue on each other's names on the appropriate page. Or, have each child answer Judaism- related questions like
What's your favorite holiday and why , or send such a sheet home for the parents to fill out with their kid, then copy and collate the results, with a fancy cover, as I said. Other yearbook pages could be Remember when.., Predictions, a simple short message from you, from the rabbi, or whatever.

Here's a different idea: Use scrapbooking supplies to make a thank you card to their parents. The front, well decorated, of course, would say something like Thank you for sending me to Hebrew School because..... then record each child's response inside . Pictures of the kids always add a nice touch.
