I froze some cooked shnitzel last week. What's the best way to defrost and re-heat it so it doesn't dry out?

I would be nervous that the water would seep through the bag and ruin the shnitzel. Also, isn't shnitzel better hot/warm?

I would probably say to wrap it still frozen in foil and bake until heated through at 350.

This is a recipe for sweet and sour fried cutlets. If your cutlets are breaded you can probably adapt this recipe.
1) Dip chicken cutlets in eggs and flour, fry, then place in a baking pan.
2) Fry green pepper, red pepper, mushrooms, and onions
3) Combine -
¾ cup ketchup
15 oz apricot jam
2 tablespoons brown sugar
4) Mix sauce with fried vegetables and pour over chicken.
* Cook for 45 min covered
* This dish freezes well. It can be frozen during any of the stages of preparation. If freezing with sauce on top, do not cook until ready to serve.
