I make a mixture of low fat mayo and dijon mustard. dip the chicken in that then coat in corn flake crumbs. lay on baking sheet and spray with cooking spray.

For how long and at what temp? covered or uncovered? is it ok to use bread crumbs? I don't have cornflake crumbs.

Thanks. I ended up using mayo and a little spicy brown mustard with bread crumbs. It's covered in the oven, we'll see how it comes out.

Marinate for as long as you have...
Dip cutlets into flavored bread crumbs and bake.
This recipe is amazing with mashed potatoes. |
I used 1.5 lbs. chicken cutlets, 2 Tbsp each honey, soy sauce and oil. Marinated overnight in fridge. Dipped in corn flake crumbs. Baked on cookie sheet at 375 for 20 minutes uncovered.

dip in spiced flour (garlic powder, black pepper & cayenne pepper)
dip into eggs
dip into flavored bread crumbs
then put in pan and bake in the oven - use some olive oil spray to make them golden - if you don't have just 1/2 way done brush a little on
350 till they say "ready"
