Here's a major deviation...
what I used for my ds's thank you card for his upsherin
maybe it can inspire you or you can use it for a thank you card! it is a little cheesy.
On the day of my upsherin, the day I turned three
I became a big boy, no longer a baby
Everyone took a snip of my curly hair
I got my new tzitzis that I proudly wear
I tasted the sweetness of each Aleph Bais letter
What a great day, it couldn’t have been better!
I want to thank you for the gift that you gave me
We can’t wait to do this again when <littlebrother's name> turns three!

here is one ....
Hello,
My name is ------- and soon I’ll be three
My paprents are making a party for me.
It’s more than a birthday, as you’ll, read in this rhyme,
We’re cutting my hair for the very first time.
An Upsherinish is Yiddish, it means cutting hair.
A Kippah and Tzitzis I’ll now get to wear.
The Torah compares a little boy to a tree.
Whose fruit may not be cut until it turns three.
If it’s roots are well nourished it will grow strong and pure.
And then the tree, just like me, will stand firm and secure.
My new Kippah and Peyos will announce clear and loud.
That I’m a Jewish boy and so very proud.
No more brushes, no more pins, no more ponytails and curls.
Never again will I hear “What a cute little girl”.
So please come and join in this beautiful tradition
You can even take a snip, my hair I won’t be missing.

Hi, my name is Menachem and soon I will be three.
My parents are making a party especially for me.
It’s more than a birthday as you’ll read in this rhyme
we’re going to cut my hair for the very first time.
An Upsherenish is Yiddish, it means cutting hair
A Kippah and Tzitzis I will now get to wear.
The Torah compares a little boy to a tree
Whose fruit may not be cut until it turns three.
If its roots are well nourished it will grow strong and pure
And than the tree just like me will always stand secure.
My new Kippah and Payos will announce clear and loud,
that I’m a Jewish boy and really so very proud.
It’s my big day and I really can’t wait,
so please join me there and reserve the date.

this one was for my chanuka upshern-
Hi! It's (boy name here)!
Do you know what's coming? Its a special day for me.
Do you know why? Because I am turning three!
I have waited for this day for so long, my upshernish is here!
No more clips, no more curls, no more ponytails! You want to hear me cheer?
I'll wear tzitzis, get my hair cut and have peyos for the first time ever,
just like a fruit tree we don't cut its fruit either, isn't that clever?
Yes we'll cut my hair, but its also on chanukah, so while its a party for me,
we'll light the menorah eat latkes and have so much more fun you see.
I can't wait to see you there, I hope you will come,
to take a snip of my hair play games and eat a doughnut, yumm!
and for my older son:
Hi ! My name is Manu, and I am turning Three
We are going to have a party just for me.
My curls are going to get cut, what a relief for me
Everyone thought I was a girl- But I am a big boy now you see.
Just like a tree that has been planted in the ground, we don't cut its fruit until it strong and sound
the same goes for baby boys, (I know I am not a tree!! )
but no one cuts my hair until I am three
So go ahead and cut my hair,
but make sure not to touch
the Peyos on the side of my head
don't cut too much!
My parents want to make sure that the Mitzvos I will know how to do
Before they entrust me with a Kippa and Tzitzis too.
I cant wait till I get my hair cut, and I want to invite you to help me
so now my parents can tell you all about the party!
Love,
I made them up.

Here's one my in laws use
My previous birthdays were fun unmatched,
but when I turn 3 there are strings attached.
We’ll all gather to cut my hair,
A Kippah and Tzitzit I’ll begin to wear,
to show the world it’s Hashem that we fear.
With 613 Mitzvot, so much good I can do,
as I begin my life as a proud little Jew!

My mother made one up 13 years ago for my brother. A bunch of years later someone said they saw it somewhere else. I wonder if it's the one Rivi or Lisaj posted. I can't even remember it.

Here's the poem I used. I took a little something from some of the poems here. Interestingly enough, I did not come straight to imamother for an upsherin poem. I googled upsherin poem and got to imamother.
My name is __
And I'm turning three
I'm going to have an Upsherin
I'm excited as can be
Everyone will take a snip of my curly hair
I'll get my new yarmulka and tzitzis that I'll proudly wear
Please come join in my celebration
