These are excellent - even better with cream cheese frosting. I usually make it as a cake, but I've made them several times as cupcakes. . . they were sooo good.
1 15 oz. can pumpkin
1 1/2 cup sugar (I use half splenda)
1/4 cup vanilla sugar
3/4 cup oil (I use 3/4 cup apple sauce)
4 eggs
2 cups flour (I use white whole wheat)
1 tsp vanilla
1 tsp baking soda
2 tsp baking powder
1 tsp salt
2 tsp cinnamon
Bake at 350 for about an hour

Defy, I've been meaning to tell you for a while what a big hit your recipe has been - someone once asked me to make a muffin side dish for a bar mitzvah meal and the next day the guests were surrounding me as the famous person who made these muffins that wre gobbled up in no time! so thanks for typing it up!!!

I just put 26 generous muffins in the oven using DefyGravity's recipe. I probably could have made 36 smaller ones.

My recipe is very similar and I get about 80-85 mini muffins.
or one jelly roll pan size cake

I got 48 mini muffins and 24 regular sized - but I doubled the recipe

I made these muffins tonight and let me tell you they were AMAZING! So moist and soo tasty! Thanks for the recipe Defy! Two thumbs up!
