Celeriac

So, I finally found a celery root and put it in my veggie soup. My house smells so delicious!!

Any other good ideas of what to do with this veggie?

yum! sneak it into mashed potatoes, kugels.. anywhere you would use potato or squash.

* Celeriac mash--peel, cut in chunk, boil. Puree in food processor, season with s&p. Can be added to mashed potato. (Just don't boil the two in the same pot as celeriac takes longer to cook).

* Celeriac salad--peel, chop in either small matchsticks or shred. First dress with a bit of lemon juice and salt to avoid discoloration, and mix in coleslaw dressing.

Does celeriac mash taste good on it's own, or does it have to be added to potatoes?
How does it taste with sweet potatoes?

Either on its own (a bit on gloopy side) or mixed with potato. I haven't tried how it goes with sweet potato, though I think celeriac flavour goes better with savory than sweetish.

actually, my soup is AMAZING and it's largely sweet mixed with celeriac

ie. 1 lb carrots, 1 lb parsnip, 2-3 sweet potatoes, 3 medium zuchini, 3 small yellow squash, 1 onion, 1 nice celeriac, salt, dill, bay leaf...water to fill in the rest of the pot (it's thick right now, but might dilute when served)

the celeriac/carrot-sweet potato (which to me and dh are the dominant vegetable flavors) is soooo yummy.
