My husband and I enjoy meat/chicken very often, but we are looking for some cheaper alternatives..... I know how to make noodles... Anybody have suggestions for cheap dinners?

you mean including meat or chicken? or dinners not involving these ingredients.
beans, lentils or tofu are cheaper then meat. last night I made homemade falafel balls with grilled vegetables and hummous. (and pitta and salad of course)
You can make things out of canned tuna eg pasta with tuna and tomato sauce, tuna patties and so on.

For chicken, try stir fries. For meat, do you eat ground meat? Stretch it with breadcrumbs and some eggs, and use it to make shepherd's pie, meatballs, chili over rice, etc. Or instead of making a chunk of meat, use it in stir fry as well. Mexican foods are often good and include chicken or meat in small amounts. Think fajitas, burritos, stuff like that.

Chicken: use chicken mince (chicken burger, chicken meatball). Buying a whole broiler and carving into different pieces are usually much cheaper. Don't buy pre-flattened schnitzels, you can cut a piece from breast (cut along the breast bone to get the whole piece), then slice and flatten.
Meat: I mix turkey mince and beef mince for healthier and cheaper meatloaf and meatballs. Use cheaper cuts and cook in a pressure cooker to get tender meat. Slice cuts thinly for stir-fry, you can stretch with tofu or veggie protein and lots of veggies.
