if you're using chicken on the bone, then put it in the pot face down and brown it for a few minutes. add spices like salt, pepper, paprika, onion, garlic...put in a cup of rice and at least 3 cups water. cover pot. bring to a boil. lower flame and cook at least 45 mins-an hour.

I don't know about something with a twist.
But I've made short grain brown rice (yes, the grain makes a difference) in a pan in the oven, with chicken on top, and baked it all for an hour and 20-30 minutes.
something like this
Rice
1 cup short grain brown rice
1/2 onion, chopped
1 clove garlic, minced
1 tsp salt
Chicken (season it as you wish, I do similar to this sometimes - amounts are approximate - you can sprinkle - don't have to measure, just be generous)
4 chicken bottoms
paprika, curry powder and/or mustard powder
1 tsp salt
1/2 tsp garlic powder
1/2 tsp onion powder
2 cups water
Place dry rice on bottom of pan. Add onion, garlic and salt.
Season both sides of each piece of chicken, including under the skin.
Place seasoned chicken bottoms top of rice.
Pour water around the chicken (not over chicken, or spices would be washed away.)
Cover tightly. Baked in preheated oven at 425 degrees.

A great recipe my mother ad I use in house and any time she sent a meal out that was a chicken dinner this was it I use brown rice or a mix my mothersually uses white rice.
chicken quarters
one part rice 2 part water
frozen mixed veg. any type you like
Onion soup mix
mix the rice water and soup mix lay veg over and place chicken on top spice with fav spices can even put duck sauce if you like sweet and bake at 350 covered. Uncover to crisp chicken if you like bakes aprox 1 1/2hr - 2 hr depending on your oven and if chicken fresh or frozen. can omit soup mix an season with spices can also use canned or fresh veg. but fresh need to cook longer.
