DH and I LOVED this recipe!

Easy to make. A good mixture of flavors. One of our favorites. This is from Pierre Franey, my favorite chef. If you like you can add a bay leaf with the mushrooms.
SERVES 4 (change servings and units)
Ingredients
4 boneless skinless chicken breast halves
4 teaspoons olive oil (or margarine)
1/2 cup minced onion (I used two medium sized onions, and made larger slices - DG)
2 teaspoons minced garlic
1 cup fresh mushrooms, sliced
1 cup chicken broth
1/2 cup dry white wine
3/4 cup rice (I used brown rice - DG)
I added some dry basil to give it a bit of color - DG
Directions
1 Brown chicken in butter in a dutch oven.
2 Scatter onion and garlic over chicken.
(I sauteed the onions and garlic first, and THEN added the chicken)
3 Add mushrooms,and cook 5 minutes.
(I used dry shitake mushrooms and added them in when I put the rice in)
4 Add chicken broth.
5 Add wine, cook another 5 minutes.
6 Add rice, cover and cook 20 minutes.

what does 4 olive oil mean?

teaspoon. Accidentally deleted when I changed butter to olive oil. I didn't measure it, just did a turn around the wok with the oil.
