Anyone have any sephardic (preferably SY) recipes for pesach that don't involve matzah meal or kitnyot? So far I only have medias and tongue and I don't really want to make the tongue (although I might give in since its my husband's favorite). I guess I could also make regular chicken & potatoes for shabbat. Please help!

I was thinking of making KP bazirgan with quinoa, substituting tamarind with mix of ketchup, prune and lemon juice. But then looks like some people consider quinoa kitniyot (at least seems to be the case with London Beth Din). You can probably use quinoa for mehshi too.
You can make pretty realistic lahemajene with round matzo crackers, though I'm having difficulty finding raw pignoli.
I heard of someone who makes KP sahleb with potato starch but frankly speaking can't imagine tasting like the real thing.

Just wanted to share the medias recipe:
Medias:
Potatoes- peel, cut in ½ and scoop out
Carrots- parboil & scoop out
Zucchini- cut in ½ & scoop out
Celery- cut in about 3-inch pieces
Mushroom- take off stems, stuff, put in pan, bake in oven, not in sauce.
Meat- 1 lb. chop meat, chopped celery, 1 egg, pepper, cinnamon, allspice?
Put on a pan, pour tomato sauce on top (2-4 cans)
Bake covered at 350 for 2 hours or until potatoes are done.
