I know I saw it in one of my cookbooks, but I cant find it does anyone have a recipe for soft pretzels?

Boil them in salted water for a few minutes.
Then bake in the oven until golden.
Serve with coarse salt and or mustard.

Hot Pretzels
By Chaya Feigy Grossman
Ingredients:
1 ounce fresh yeast
1 1/2 cups warm water
2 tablespoons sugar
1 teaspoon salt
4 cups flour
1 egg
handful of coarse salt
Utensils:
large bowl
cookie sheet
cup or small bowl
pastry brush
Directions:
1) Preheat oven to 425 degrees Fahrenheit (220 degrees Celsius).
2) Pour the warm water into a large mixing bowl. Place the yeast into the warm water to dissolve.
3) Add the sugar, salt and flour.
4) Knead the dough by hand or in a mixer until it forms a smooth dough.
5) Divide the dough into eight parts. Roll each piece of dough into a long, thin strand about 12 to 18 inches (30 to 45 cm) long.
6) Follow the steps in the pictures to shape the strands into pretzels.
7) Beat the egg in a cup. Brush each pretzel with beaten egg.
8) Sprinkle the pretzels with coarse salt.
9) Bake for 10 minutes.

a pizza shop in my neighborhood, which has since closed down, used to sell soft hot pretzels that looked just like the ones sold by vendors on the streets in manhattan, or in mall food courts...they smelled like the nonkosher ones and tasted heavenly, too. very different from the ones you can buy frozen and warm up in the oven. do you know if these pretzels are like what I'm describing?
