I would like to make cheese buns. The one that has cheese inside the dough. I have seen them in the bakery but would like to try my own.
Can anyone please help me?

I have a recipe at home for the Georgian/Bukhari one, but not with me right now. It was originally in Mrs Gilda Angel's sephardic cookbook but m bukhari friend makes a very similar one too.
Outside dough is technically the same as challah dough, except make it less sweet and I use 20% whole wheat/80% white flour mix. Or you substitute 2-3tbsp of semolina or fine bulgar. You make a flat round piece about 20-30cm diameter and put the cheese filling in the middle, gather the corners and twist them in the centre like a belly-button.
The filling is mix of grated kashkaval (or feta or other sharp/saltyish goat cheese), edam, a blob of sour cream and 1 beaten egg, with 1tsp of chopped fresh dill. The tricky bit is to make sure the dough doesn't tear as the filling is quite runny. You rest the "bundle" till it bulks up (anywhere from 30min to 1hr), brush egg wash on the top then you bake in the oven. I'll post again once I have the proper recipe.
