I just opened a sealed mayonnaise tonight. Best by date is next year. Does it make sense for it to have a weird taste? It's a different brand maybe that's what it is?

If it's kosher for pesach, doesn't matter if it has an expiration of next year.
I opened turkey breast the week after pesach that has expiration date more than a month later. Slimy garbage.

I had this at least once. Tasted really off and I ended up just throwing it out. Not worth the few dollars to get food poisoning.

If it doesn't taste spoiled, just different, then that could be the answer. OTOH, if you're really not sure, chuck it. Better safe than sorry.
