Usually grate the apples and mix everything else by hand.
What is a good method /recipe for using food processor? Do I need to process the apples and nuts separately so they don't become too mushy? And then mix after.
Do I need to shred apples or can I use a regular blade ?

Just made my charoset in the food processor.
I used the S blade to process the apples, then I added ground walnuts, cinnamon, and Grape juice.
Processed a bit more and then mixed by hand.
It came out great.

The " S" blade is the regular blade that sits on bottom, correct (not the shredding)? Nothing fancy?

Yes. Also known as the knife blade.
Just throw everything in, whiz the machine, and you'll have charoset.
