Anyone? I remember there was one with root veggies. Any other ideas

Rub all over with oil and lots of salt. Set aside to marinate.
Carmelize sugar and onions until caramel color. Add peeled tomatoes. Cook until you get a good thick sweet tomato sauce. Blend.
Bake chicken covered. Uncover and glaze with the sauce last 40 minutes.
