Pesach dips

Looking for some new ideas for dips I can make for pesach. If possible stay away from mayo and cottonseed oil unless it’s to die for!

Tomato Dip. Very easy to peel tomatoes. Score an X in it with a knife, drop in boiling water for less than 60 seconds, then run under cold water. Peel comes right off.

Onion dip is delicious, sauté on low flame until caramelized season very well with sugar, salt, and pepper and blend until chunky. Can add a tbsp of mayo before blending makes it creamy.

Eggplant dip. Pierce eggplant with fork, wrap in foil and place in pan. Add 2 peeled, oiled and wrapped shallots or a small red onion. Roast until done. Blend and season, adding just a few tbsp mayo if desired but up.to you.

Avocado dip. Mash well with small fork until creamy. Add grated onion, splash of lemon, and salt to taste.

Overtime cook has a delicious roasted red pepper dip on her website.

Olive tapenade is yummy too.

Yes, I personally liked it - Unlike baking though, I tend to not follow recipes exactly so I may have tweaked ratios. I also used evoo instead walnut oil

Roast small cubes of eggplant, peppers and onions with olive oil or any oil, salt, pepper and paprika.

Marinated eggplant
Spiced black olives
Roasted garlic
Mushrooms and onions
Leeks

(I only use olive oil, and I also try to avoid mayo on Pesach cuz I just don’t like it)
