I'm traveling to Israel (after not having been for years) for a work-related trip.
What can I expect in Jerusalem? Is there anything I need to know about the matzav? Someone told me that a lot of places that cater to tourists aren't open - is that accurate? I'm going to have to fend for myself while there, so I want to know what to expect.

Jerusalem is running as usual. What specifically do you need to know about?

Where are you planning to stay? A lot of hotels are hosting g evacuees, so if you are planning on a hotel that might be an issue. Otherwise, Jerusalem is functioning as normal.
If there is a siren, head to the nearest miklat or mamad within ninety seconds, and stay there for ten minutes. If there isnt one available stay in the stairwell. Apart from the first few days, we have had very few sirens in Jerusalem, so you probably won't have to worry.

Just visited.
Some minor differences.
1) we stayed in a hotel that didn’t have evacuees. It was short staffed.
2) some restaurants aren’t open motzei shabbos now. Business isn’t great for them now as they mostly cater to tourist so it isn’t worth it for them to be opened motzei shabbos. Some aren’t open as late
3) it’s feels a lot safer… but security is more strict. Not a bad thing, just some times it will take more time
4) waze won’t show traffic. Allow yourself more time to drive places.
5) there might be a siren. Know what to do if there is.

You may download pikud haoref's app on your phone but it's not a must.
If there is a very specific place you want to visit you may check in advance if they have regular opening hours etc.
Enjoy the shopping in Jerusalem (if it's a thing for you) far less crowded than in the summer.
