Potato bourekas with ready made flaky dough (and I know some people that use powdered mashed potatoes for it)
Bake some ready breaded cauliflower

Press dairy mashed potatoes in a 9 by 13 pan, sprinkle a layer of Shredded cheese, add a layer of Sauté mushrooms & onions & top with another layer of cheese. Bake just long enough to melt & brown the cheese.
The original recipe has a bottom crust of pastry dough, I don't do it but it's up to you.
